Chocolate Chip Sandies

This is a sable biscuit, Ottolenghi style. They’re crisp, buttery and totally melt-in-the-mouth, bathed in dark chocolate with a good hit of flaky sea salt. The sandy texture is thanks to the egg yolks, which enrich the cookie and contribute to its crispy yet melting texture.
